I had a wheel of camembert, a craving for pasta, and zero plan. I asked Claude for a recipe. It suggested garlic, mushrooms, spinach — none of which I had. So I told it what was actually in my kitchen: carrots, bell pepper, no garlic. It rewrote the recipe on the spot. No scrolling through five blog posts to find one buried recipe. Just a quick back-and-forth until it matched my fridge.

I skipped garlic entirely rather than fake it with onion powder — the chili and thyme carried it fine. And it turns out the swap wasn’t a compromise:

  • Carrots bring sweetness a garlic-heavy version wouldn’t have had.
  • Bell pepper adds crunch where spinach would’ve just wilted away.
  • No garlic means the chili and thyme actually get noticed instead of hiding behind it.
  • Camembert does what it always does — melts into a sauce that clings to every bite.

Result: genuinely good, and different from the original idea in a way I liked better.

Recipe

Ingredients

  • 125g camembert wheel
  • 100g pasta (penne or fusilli)
  • 1 tbsp olive oil
  • 1/2 tsp red chili flakes
  • 75g cherry tomatoes, halved
  • 1 carrot, thinly sliced or julienned
  • 1/2 bell pepper, sliced into strips
  • 1 sprig fresh thyme
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 15g grated parmesan
  • 50ml pasta water, reserved

Instructions

  1. Score the camembert’s top in a crosshatch, tuck in thyme, drizzle with 1 tbsp oil, sprinkle with half the chili flakes and a pinch of salt. Bake at 200°C (400°F) for 15–20 min until molten.
  2. Boil pasta until al dente. Reserve some water, drain.
  3. Sauté carrots in remaining oil and chili flakes, 5–6 min.
  4. Add bell pepper, cook 3–4 min until tender-crisp.
  5. Add tomatoes, cook 2 min.
  6. Toss in pasta, scoop in the molten camembert, splash in pasta water, mix into a sauce.
  7. Season, top with parmesan, serve hot.
